Old Chinese Jade

First, an old jade has a layer of oxidation in the surface, commonly known as "packets Pulp," which seems like the pear skin and is different from the natural color. The new one has not.
Second, the themes of the carvings. Ancient jades are symbols of rating, right and authority using myth characters, such as the dragon and phoenix, etc. And the new ones generally use auspicious patterns.
